This lemony white bean dip is a great alternative to hummus if you’re looking to change things up. It’s super nutritious and made with Navy Beans; in fact, one cup serves a whopping 15 g of protein and 19 g of fiber. It’s great on crackers, veggies, or just on its own.
Here’s the recipe:
Lemony White Bean Dip Recipe
Total Time: 5 minutes
Ingredients:
1 1/2 cups navy beans (or other white beans), drained
1 clove garlic
2 Tbsp. lemon juice
1/4 tsp. salt
1/2 tsp. black pepper
1/3 cup olive oil
Instructions:
Put all ingredients except the oil in a blender, and turn the motor on to medium speed.
Remove the center piece from the blender lid, and slowly drizzle in the oil with the motor running. Turn it up to high until the dip is smooth, about 10-20 seconds more.
Pour into a bowl to serve. Garnish with extra cracked pepper, if you wish.
